Ingredients
- 4 medium sweet potatoes
- 2 tbsp avocado oil
- 2 garlic cloves pressed
- 1 tsp dried parsley
- 1 tsp dried basil
- kosher salt and pepper to taste
Instructions
- Preheat the oven to 375ºF and line a medium sheet pan with parchment paper.
- To prepare the sweet potatoes, trim off the ends and discard; cut each in half crosswise. Then, each half into quarters and place them on the prepared sheet pan.
- Bake the sweet potatoes for 20-25 minutes or until softened. Allow them to cool for a bit as you prepare the seasoning mix.
- In a small bowl, combine the oil, garlic, parsley and basil.
- Lightly smash each sweet potato piece as shown in the photos, until it's 1/4-inch flat. Work gently as they can easily break.
- Baste each with the seasoned oil mixture and sprinkle with salt and pepper to your taste.
- Turn your oven to broil, and broil the smashed potatoes for 8-10 minutes, or until golden brown with crispy edges.
Notes
- Storing leftovers: Place any leftover potatoes in an airtight container, in the fridge for 4 to 5 days.
- Reheating: Reheat at 375˚F in an oven or air fryer until warmed through, about 10-15 minutes. Or heat them up in a skillet on the stovetop with a little bit of butter or oil over medium heat until warmed through. You can microwave them, but they won't crisp back up as well.
