Balsamic Vinaigrette

This balsamic vinaigrette blends tangy balsamic vinegar and smooth olive oil with a hint of honey and mustard for balance. It has a creamy, well-emulsified texture achieved by shaking the ingredients thoroughly. The vinaigrette's balance of sweet, sour, and savory flavors makes it a versatile dressing, suitable for salads, roasted vegetables, or as a chicken marinade.

Description

The Balsamic Vinaigrette recipe combines balsamic vinegar, honey, Dijon mustard, olive oil, kosher salt, and black pepper. The ingredients are shaken together in a jar until emulsified and creamy. The dressing balances the acidity and slight sweetness of the balsamic vinegar with the richness of olive oil and the piquancy of mustard and pepper. This creates a smooth vinaigrette that coats greens or vegetables evenly. The honey's quantity can be adjusted depending on the natural sweetness of the balsamic vinegar used, without added sugars. The vinaigrette keeps well when refrigerated and should be shaken before each use to recombine.

This vinaigrette complements salads and pasta salads, and it also works well on grilled or oven-roasted vegetables. It can double as a marinade for chicken, where its acidity and flavor can enhance the meat before cooking.
