Banana Coconut Baked Oatmeal
Description
This baked oatmeal brings together mashed bananas and coconut flavors within a wholesome base of rolled oats. Binding the mixture are eggs and coconut milk, enriched by brown sugar and aromatic spices including nutmeg and vanilla. Baking in a casserole dish results in a firm yet moist texture that holds together well when sliced and served warm or chilled.
The inclusion of shredded coconut and coconut milk provides a distinct flavor profile some may find refreshing compared to traditional oatmeal dishes. Baking powder offers slight rise and lightness. Nutmeg adds subtle warmth. All ingredients mix easily by hand, making it accessible for home cooks.
Best served warm and optionally topped with cold milk, this baked oatmeal can be made with 2-3 large or 3-4 smaller ripe bananas to ensure proper sweetness and moisture. The recipe benefits from a pre-sprayed casserole dish to ensure easy serving.
