Ingredients
- 2 cups all-purpose flour
- 1 ½ tablespoons poppy seeds
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup mashed ripe banana, about 2 large bananas
- 1 large egg
- ¾ cup granulated sugar
- ¼ cup vegetable oil
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
Orange Glaze
- 1 cup powdered sugar
- 2 tablespoons fresh orange juice, more if needed
- 1 teaspoon orange zest
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Line a 12-cup muffin pan with muffin liners, spray lightly with nonstick cooking spray, and set aside.
- In a large bowl, combine 2 cups all-purpose flour, 1 ½ tablespoons poppy seeds, 2 teaspoons baking powder, and ½ teaspoon salt.
- In a medium bowl, whisk together 1 cup mashed ripe banana, 1 large egg, ¾ cup granulated sugar, ¼ cup vegetable oil, 1 tablespoon orange zest, and 1 teaspoon vanilla extract. Add the wet ingredients to the dry and stir together until just combined.
- Add the banana mixture to the flour mixture and mix until just combined. Scoop the batter into the prepared muffin pan until each well is ¾ of the way full.
- Bake for 18 minutes, or until a toothpick comes out clean from the center of the muffins.
Orange Glaze
- Add 1 cup powdered sugar, 2 tablespoons fresh orange juice, 1 teaspoon orange zest, and 1 teaspoon vanilla extract to a medium bowl and whisk until smooth. Add more orange juice 1 teapoon at a time as needed until the desired consistency is reached.
- Brush or drizzle the glaze over the cooled muffins. Let the glaze sit on the muffins for 20 minutes or so before serving.
