Shrimp:
- 1 1/2 pounds jumbo shrimp
- 4 large egg whites
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 4 cups vegetable oil for frying
- 1/4 cup sliced green onion optional
Bang Bang Sauce:
- 1/2 cup mayonnaise
- 1/4 cup Sweet chili sauce
- Sriracha hot sauce to taste
- 1 tablespoon honey

Instructions
- Peel and devein the shrimp. In a medium-sized mixing bowl, whisk together the egg whites, cornstarch, salt, and white pepper. Add the shrimp to the mixture, making sure to coat them well, and set aside.
- In another bowl, mix together the mayonnaise, sweet chili sauce, sriracha sauce, and honey. Stir until the mixture is smooth and combined.
- Heat the vegetable oil in a large, heavy-bottomed pot to 350 degrees. Working in small batches, fry the shrimp until they are cooked through and golden brown, about 2-3 minutes. Remove the shrimp from the oil and drain them on a paper towel-lined plate.
- Toss the fried shrimp with the bang bang sauce until they are well-coated. Serve immediately and garnish with sliced green onions for color.
