Bavarian-Style Beef Goulash

Ingredients

  • 2 Pound chuck roast
  • 2 Tablespoons clarified butter or Lard
  • 2 yellow onions 1.5 pounds, diced
  • 2 carrots cut into coins
  • 3 garlic cloves minced
  • 3 Tablespoons tomato paste
  • 1 teaspoon Beef Better Than Bouillon

Seasoning Mix 1

  • 1 Tablespoon sweet paprika
  • 1 teaspoon marjoram
  • 1 teaspoon smoked paprika
  • ½ teaspoon caraway seed
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Seasoning Mix 2

  • 2 Tablespoons sweet paprika
  • 2 bay leaves
  • ¼ teaspoon kosher salt

Liquid Ingredients

  • 2 Cups beef bone broth
  • 1 Cup dark beer like Dunkel
  • 1 Tablespoon red wine vinegar

Instructions

  1. Heat butter over medium-high heat.
  2. Brown the meat, then remove from the pot.
  3. Add the onion and cook for 5 minutes, reduce the heat to low. Continue cooking until soft.
  4. Add the garlic, tomato paste, and seasoning mix #1. Stir and allow to bloom for 3 minutes, taking care not to burn.
  5. Add the beer and increase the heat to medium. Bring to a low boil then simmer until reduced and only a little liquid remains.
  6. Add seasoning mix #2, the red wine vinegar, beef broth and Better Than Bouillon. Bring to a simmer.
  7. Add back in the beef and carrots. Simmer, uncovered, for 2-3 hours until thickened and the beef is tender. Stir occasionally.
