German Goulash Soup (Gulaschsuppe)

My easy goulash soup is German comfort food for cold days! Tender chunks of beef and vegetables in a richly spiced broth make this low carb soup a family favorite.

Instructions

  1. Season the beef with salt and pepper and add half of the oil to a large soup pot. Sear the beef cubes in for 4 minutes per side on a medium heat, stirring occasionally. Set aside.
  2. Add rest of the oil to the pot, then add the leek or onion, celery, turnips and garlic. Sauté for about 5 minutes on a medium heat until soft.
  3. Add the beef chunks back into the pot and pour in the beef broth and red wine. Season with salt, pepper, paprika powders, bay leaves, tomato paste, caraway and marjoram. Stir. Cover with a lid and bring the soup to the boil. Then, reduce to a simmer and cook for about 50 minutes.
  4. Add the bell peppers and carrot slices. Simmer for another 30 minutes until the vegetables are tender.
  5. Serve with fresh parsley and optional sour cream or yogurt.
