Beef Taquitos
Description
The Beef Taquitos recipe starts with a lean roast beef cooked and shredded after simmering with onion soup mix, water, and hot sauce, infusing the meat with savory seasoning. Small corn tortillas are lightly fried in oil for just seconds per side to soften them for rolling without breaking. Inside each tortilla, shredded cheddar cheese goes in first, followed by the beef to help the cheese hold inside while baking. Once rolled, the taquitos are placed seam-side down on a greased pan and baked at 400 degrees Fahrenheit before flipping to brown all sides evenly and achieve a golden crisp exterior. The final taquitos offer a contrast between the crispy tortillas and the tender, cheesy beef filling. Serving suggestions include traditional Mexican dips like sour cream and guacamole, making them a versatile finger food for gatherings or casual meals.
The recipe also notes different methods for preparing the roast beef, such as searing and oven roasting, using an Instant Pot, or slow cooking in a crock-pot, each providing options based on available equipment and time. Cooking the beef in advance and reserving the flavorful juices allows you to repurpose the liquid as a base for gravies or stews, reducing waste and enhancing meals beyond the taquitos.
Ingredients
- 2 pounds roast beef lean
- 1 envelope onion soup mix dry
- 1 cup water
- hot sauce a few shakes
- 1 pound cheddar cheese shredded
- 30 small corn tortillas (or 20 large corn tortillas)
- neutral cooking oil generic cooking oil
Instructions
- Heat oil on medium heat. Fry corn tortillas in hot oil for 10-12 seconds on each side. Drain on paper towels.
- Add a little cheese and shredded beef to each tortilla and roll up. Be sure to add cheese first then the beef so the cheese won't melt out.
- Place taquitos seam-side down on a lightly greased cookie sheet. Bake at 400-degrees for 6-8 minutes.
- Turn taquitos and bake for another 6-8 minutes or until taquitos are nice, golden brown, and slightly crispy on all sides.
- Serve with sour cream, salsa, guacamole, and/or nacho cheese dip.
Notes
- Sear beef thoroughly before slow cooking to enhance flavor and texture.
- Shred the roast finely to ensure easy rolling in tortillas.
- Reserve and freeze the cooking juices to use as a flavorful beef stock for gravies or stews.
- Fry tortillas briefly just until pliable to avoid cracking when rolling.
- Bake taquitos seam-side down first to keep them closed while cooking.
- Use a baking sheet lightly greased to prevent sticking during baking.
