Ingredients
- 1 lb lean beef such as sirloin or flank steak, thinly sliced against the grain
- 4 cups broccoli florets
- 2 tbsp avocado oil or olive oil
- 3 cloves garlic minced
- 1- inch ginger minced or grated
- ¼ cup soy sauce or coconut aminos
- 2 tbsp water
- 1 tbsp sesame oil
- 1 tbsp cornstarch or arrowroot powder optional, for thickening
- brown rice or quinoa for serving
- Sesame seeds and sliced green onions for garnish
Instructions
- Marinate the Beef: In a bowl, combine the sliced beef with soy sauce (or coconut aminos), garlic, ginger, and sesame oil. Let it marinate for at least 15-30 minutes to enhance the flavor.
- Cook the Broccoli: In a large skillet or wok, heat 1 tablespoon of avocado oil over medium-high heat. Add the broccoli florets and stir-fry for about 3-4 minutes until they are bright green and slightly tender. Remove the broccoli from the skillet and set aside.
- Cook the Beef: In the same skillet, add the remaining tablespoon of avocado oil. Add the marinated beef and stir-fry for about 3-5 minutes, or until it’s browned and cooked through. If using, sprinkle the cornstarch over the beef and stir to combine, cooking for another minute until thickened.
- Combine Ingredients: Return the broccoli to the skillet with the beef. Add the water and stir to combine everything. Cook for an additional 2-3 minutes until the broccoli is heated through and coated in the sauce.
- Serve: Serve the beef and broccoli over cooked brown rice or quinoa. Garnish with sesame seeds and sliced green onions if desired. Enjoy!
Notes
- Flank steak or sirloin works well, but you can also use ground beef or chicken for a variation.
- Feel free to add other vegetables like bell peppers, snap peas, or carrots for extra color and nutrition.
- Marinating the beef for longer enhances flavor, so consider doing it in the morning for a quick dinner later.
- Use coconut aminos instead of soy sauce for a gluten-free and lower-sodium option.
- This dish holds up well in the fridge, making it a great option for meal prep. Store in airtight containers for up to 4 days.
