  • 1 ⅓ cup Mildura brewery choc hops beer or any stout/dark beer
  • 1/2 cup caster sugar
  • 2 large egg yolks
  • 3 small gelatin sheets about 3g (0.11 oz)
  • 4 ⅕ cup Whipped Cream

Instructions

  1. Whip the cream until soft peaks form and keep cold.
  2. Combine the egg and sugar.
  3. Place gelatin in cold water to soften.
  4. Bring the beer to boiling temperature.
  5. Pour the hot beer into the combined egg/sugar.
  6. Put the beer mixture back on the flame and heat to just under the boil (do not boil) to slightly thicken, stirring constantly.
  7. Incorporate the gelatin.
  8. Cool in an ice bath and when cool to the touch place the whipped cream in the mixture and whisk together until smooth.
  9. Spray plastic dariole moulds with an all purpose spray and fill with the mixture.
  10. Refrigerate for 4 hours minimum.
