Ingredients

  • 1 beet approximately 6 beets, precooked, small package
  • 1 garlic peeled, small clove
  • 2 Tbsp extra virgin olive oil good quality
  • 2 Tbsp lemon juice freshly squeezed
  • 1 tsp za'atar seasoning
  • ½ tsp salt sea salt
  • ¼ tsp cumin ground
  • 1 to 2 tsp of water if needed to thin the puree

Instructions

  1. All ingredients ready? Let's begin!
  2. Place the beets, garlic, olive oil, lemon juice, za’atar, salt, and cumin in a blender.
  3. Puree the ingredients until smooth and creamy. If the puree is too thick, thin it with a little water, adding 1 teaspoon at a time.
  4. Serve the puree as a bed for roasted vegetables or spooned over the top of a grain bowl. Otherwise, store it in a sealed container in the refrigerator for a few days.
