Description
This chicken salad recipe features cooked chicken breast combined with a creamy blend of mayonnaise and Dijon mustard. Red grapes provide a fresh, fruity sweetness, while toasted almonds add a pleasing crunch. Sliced green onions and chopped celery introduce mild sharpness and crisp texture. Optional fresh dill brightens the flavor with a herbaceous note.
Chicken is simmered and diced just before mixing with the other ingredients. The simple process yields a wholesome salad suitable for sandwiches, wraps, or as a chilled side dish during warmer weather.
Using rotisserie or leftover chicken can save time without sacrificing flavor. The dill is optional but recommended for added brightness. Adjust salt to preference after mixing.
Ingredients
- 2 lb chicken breast see notes
- 1 cup mayonnaise preferably sugar-free or homemade
- 1 cup red grape quartered
- ¾ cup almonds toasted, sliced
- 4 green onions sliced
- 3 talks celery chopped
- 1 tablespoon dill optional, fresh
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Place the chicken in a large pot and cover with an inch of water. Bring the pot to a boil then reduce the heat, cover the pot, and simmer for 20 minutes. Remove the chicken from the pot and, once cool, dice it into small pieces.
- Add the diced chicken and all the remaining ingredients to a large bowl and mix well. Season with additional salt, as needed.
Notes
- Rotisserie or leftover cooked chicken can substitute simmered chicken to save time.
- Dill adds a fresh, bright flavor but can be omitted if not preferred.
- You'll need about 4 ½ cups of cooked, diced or shredded chicken for this recipe.
