For the Dressing

  • ¼ C extra virgin olive oil
  • lemon juice of 1 small
  • kosher salt to taste
  • black pepper to taste, cracked

For the Salad

  • C black beans drained and rinsed, canned
  • C corn drained, canned, sweet
  • ¼ C red onion minced
  • 2 Tbsp cilantro roughly chopped, fresh
  • C cherry tomato quartered
  • ¼ C queso fresco
  • ¼ C avocado diced

Instructions

  1. In a small bowl, whisk together the dressing ingredients, then pour into a pint-sized mason jar. Layer the salad starting with the black beans, then corn, red onion, cilantro, tomatoes, queso fresco, then avocado. Seal with a lid and refrigerate until ready to eat, then tip the jar upside down to distribute the dressing, remove lid, and enjoy!
