                                Ingredients
Blackened chicken
- 1 tablespoon McCormick Chili Powder
 - 2 teaspoons McCormick paprika
 - 1 teaspoon McCormick onion powder
 - 1 teaspoon McCormick Cumin
 - ½ teaspoon McCormick garlic powder
 - 1 teaspoon McCormick Italian Seasoning
 - 1 teaspoon salt
 - ¼ teaspoon pepper
 - 2 pounds boneless skinless chicken breasts thinly sliced
 - 2 tablespoons olive oil
 
Power bowls
- 2 cups broccoli florets
 - 1 sliced red bell pepper
 - 1 sliced yellow bell pepper
 - 1 (15-ounce) can chickpeas
 - 2 tablespoons olive oil
 - 1 cup chopped red cabbage
 - 1 chopped avocado
 
Instructions
To prepare the blackened chicken
- In a small bowl add 1 tablespoon McCormick Chili Powder, 2 teaspoons McCormick paprika, 1 teaspoon McCormick onion powder, 1 teaspoon McCormick cumin, ½ teaspoon McCormick garlic powder, 1 teaspoon McCormick Italian Seasoning, 1 teaspoon salt and ¼ teaspoon pepper. Rub the spice rub evenly on the front and back of 2 pounds boneless skinless chicken breasts.
 - In a medium-sized skillet over medium-high heat add 2 tablespoons olive oil. Add the chicken and cook on each side about 2-3 minutes or until cooked through to 165 degrees Fahrenheit.
 
To prepare the power bowls
- Preheat oven to 425 degrees Fahrenheit. On a baking sheet add 2 cups broccoli florets,1 sliced red bell pepper, 1 sliced yellow bell pepper and 1 (15-ounce) can chickpeas. Salt and pepper and drizzle with 2 tablespoons olive oil . Roast for 15 minutes or until tender.
 - To assemble divide the chicken evenly with the broccoli, peppers, chickpeas, 1 cup chopped red cabbage, and 1 chopped avocado.
