An easy homemade Russian Blinis recipe brings you the best appetizer with smoked salmon slices, sour cream, and fresh dill on the top.

Ingredients
- 1/3 cup buckwheat flour
- 2/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1 medium egg 2 oz with shell
- 5 tablespoons unsalted butter divided
Toppings
- 6 oz (175 grams) smoked salmon slices
- 1/4 cup sour cream
- fresh dill
Instructions
- In a bowl, combine buckwheat flour, all-purpose flour, baking powder, and salt. Set aside
- In another bowl, whisk together the milk, egg, and two tablespoons of melted butter. Pour this mixture into the dry ingredients and whisk until well combined.
- Heat 1 tablespoon of butter in a nonstick frying pan over medium heat. Spoon 1 tablespoon of batter into the pan for each blini. Cook each blini for about 2 minutes on each side, or until golden brown around the edges. Gently flip the blinis to cook both sides evenly.
- Remove the blinis from the pan and wipe it with a paper towel. Add more butter to the pan and repeat the process with the remaining batter, cooking each blini until golden brown on both sides.
- Serve the blinis with a thin slice of smoked salmon, topped with sour cream and a sprinkle of fresh dill.
