Blue Cheese Smoked Brisket Burgers
Description
This burger recipe starts with beef seasoned simply with salt and pepper, divided into sections molded into thin patties. Blue cheese is sealed inside each burger by sandwiching it between two patties, creating a creamy blue cheese center. The patties are grilled to desired doneness and topped with melting Havarti cheese for added creaminess.
The assembled burgers are layered with slices of smoked brisket on the bun bottom, providing smoky, tender meat contrast, followed by the blue cheese-stuffed patty. Crispy onion straws add crunch and a slightly sweet bite, while BBQ sauce contributes a balance of smoky sweetness and acidity to unite the flavors.
The accompanying onion straws are made by marinating sliced onions in buttermilk, then coating with a seasoned mixture of flour and panko breadcrumbs before frying until crisp. This homemade element enhances texture and flavor depth in the burger.
Ingredients
- 2 pounds ground beef we like to use ground sirloin
- salt to taste
- black pepper to taste
- 1 cup blue cheese crumbles
- 8 lices havarti cheese
- 6 cups brisket click here, smoked, sliced
- 4 cups Onion straws see below
- 3 cups BBQ sauce
- 8 potato hamburger buns or your favorite burger buns
For the onion straws:
- 1 white onion sliced, or yellow onion
- 1 cup buttermilk
- 1/2 cup flour
- 1/2 cup panko breadcrumbs
- seasoning salt to taste
- 1 cup neutral cooking oil for frying, generic cooking oil
Instructions
- Combine beef and salt and pepper until well seasoned. Separate beef into 6-8 sections or balls.
- Taking one section at a time, make each ball into two separate, super thin, beef patties.
- Place about 2-3 tablespoons of blue cheese onto the top of one of the patties and press the other patty over the top (sealing the blue cheese inside).
- Continue with remaining beef patties, cover, and set aside while grill heats.
- Grill burgers until desired doneness, then place a slice of Havarti over each patty. Remove from heat when just melted.
- Place a few thin slices of smoked brisket on bottom half of a burger bun then layer on the burger patty and onion straws. Add BBQ sauce to taste and top with bun. Serve immediately and ENJOY!
For the onion straws:
- Place sliced onion in a bowl with 1 cup buttermilk, cover and refrigerate at least 30 minutes. In a separate bowl, combine flour, breadcrumbs, and seasoning salt. Remove onion from buttermilk and mix into the flour mixture until well combined. Heat oil in a deep skillet until hot (about 350 degrees) and add onion straws in batches (about a handful size per batch). Remove from oil when dark golden brown and crispy.
