Blueberry Clafoutis (Julia Child Recipe)

  • 1 ¼ cup whole milk
  • cup granulated sugar
  • 3 eggs
  • 1 tablespoon vanilla extract
  • teaspoon salt
  • 2 cups blueberries
  • 1 cup all purspose flour

Instructions

  1. Preheat the oven 350 F.
  2. In a bowl of a standing mixer, combine milk, ⅓ cup of sugar, eggs, vanilla, salt and flour. Blend until the mixture is smooth and frothy.
  3. Lightly grease 8*8 baking dish with butter and pour a ¼ inch layer of the batter. Place it in the oven and let the batter set for about 5 minutes until a film of batter forms on top of it.
  4. Remove from the oven, spread blueberries and then the remaining sugar on top of the batter.
  5. Pour on the remaining batter and smooth with the back of a wooden spoon.
  6. Bake for 50 minutes.
  7. Serve warm and enjoy!

Notes

  • How do you know when clafoutis is done? The clafoutis is done when it is puffed and golden brown on the top, and a toothpick inserted into the center comes out clean. This usually takes about 50 minutes in the oven.
  • Storage: Blueberry clafoutis can be kept in the refrigerator for up to 2 days. Be sure to cover it with plastic wrap or store it in an airtight container to maintain its freshness.
