Description

Blueberry Cream Cheese begins by cooking blueberries with lemon juice until they break down and reduce into a thick jam. This cooking concentrates the berry flavor and creates a jam with both sweet and tart notes. The jam is then cooled slightly and blended with cream cheese and vanilla extract, creating a smooth, bright blue spread with creamy texture and fruity freshness.

The combination delivers a balance of tartness from lemon and cream cheese acidity with the natural sweetness of blueberries. The vanilla adds a subtle aromatic hint. Additional sweetener can be added to suit personal taste, either powdered sweetener for low-carb options or honey or maple syrup for traditional sweetness.

This spread can be chilled before serving to firm up the texture. It works well as a topping for bagels, toast, or crackers, and can also be used as a filling for pastries or a topping for desserts that complement its fruity creaminess.

The recipe yields about 200 grams, enough for six 2-tablespoon servings. The blueberry jam can be blended while still warm for easier mixing and a chunkier texture if desired. Store refrigerated in an airtight container for up to one week.

Ingredients

  • 1 cup blueberries fresh or frozen, 150g
  • ½ cup cream cheese 120g
  • 2 teaspoon lemon juice 8ml
  • 1 teaspoon vanilla extract 4ml

Optional Add-in

  • 1-2 tbsp powdered sweetener or honey/maple syrup

Instructions

  1. Put the blueberries and lemon juice in a small pot. Cook them on the stovetop over medium heat. Once the mixture starts to bubble and the blueberries soften, mash them with a potato masher or with a fork.
  2. Continue cooking over low heat until the blueberry liquid evaporates and the mixture turns into a jam. This takes around 7-10 minutes. Stir regularly towards the end so the sauce does not burn. Take off the heat and let it cool for 5 minutes.
  3. Put the cream cheese and the vanilla extract into the food processor or in a large mixing bowl ***see notes. Add the blueberry jam on top and whip or blend the mixture until it is smooth and has a bright blue colour. Taste and decide if you need to add additional sweetness.
  4. Cool the blueberry cream cheese in the fridge until ready to serve.

  • This recipe produces about 200 grams or 7 ounces of spread, enough for six servings of two tablespoons each.
  • You can adjust sweetness by adding powdered sweetener for a low-carb option or honey/maple syrup for traditional sweetening.
