  • 1 cup all-purpose flour
  • 1 1/2 cups rolled oats
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In another bowl, whisk together the flour, oats, baking powder, baking soda, salt, and cinnamon. Gradually add to the creamed mixture, mixing just until incorporated.
  4. Gently fold in the blueberries. Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 12-15 minutes or until the edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
