Blueberry Sausage

These homemade Blueberry Sausage breakfast patties are filled with spices, juicy blueberries and a hint of maple syrup. Serve with eggs for the perfect low carb breakfast!

Ingredients

  • 1 pound ground pork
  • 1 pound ground beef
  • 2 teaspoons salt
  • 1 tablespoon fresh sage finely chopped or 1 teaspoon Dried Sage
  • 2 teaspoon fresh thyme finely chopped or 1 teaspoon Dried Thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 2 tablespoons maple syrup
  • 1 cup fresh blueberries
  • extra virgin olive oil

Instructions

  1. Combine all ingredients except for the blueberries and olive oil in a bowl. Next add the blueberries and gently fold theminto the ground meat mixture.
  2. Divide and form into 12 patties. Pour some olive oil onto your hands to help you handle the meat. The meat is less likely to stick to your hands as you form the patties.
  3. Heat a few tablespoons of oil in a large skillet over medium high heat. Place the patties in skillet and cook about 5 minutes per side. You’ll need to do the cooking in batches. Serve immediately.

Notes

  • If you plan on freezing this breakfast sausage recipe, place the patties on a baking sheet lined with parchment paper, place in the freezer for a few hours before transferring to a resealable freezer container. To reheat, you can thaw in the refrigerator in advance or cook them directly from frozen. If cooking from frozen, they will need additional cooking time.
  • If you prefer to bake the sausage patties, preheat your over to 350 degrees. Then bake for 20 minutes.
  • If you want to use the air fryer, place the patties in the air fryer basket in a single layer then bake the patties in the air fryer for 20 mins at 370 then flipping halfway.
  • Pour some olive oil onto your hands to before you form the patties to help you handle the meat. The meat is less likely to stick to your hands as you form the patties.
  • It’s helpful to use an ice cream scoop to get 12 equal amounts of meat and then use your hands to form the patties.
  • I prefer the pan-fried method of cooking, but air fryer is a close second and less oil splatter.
  • I’m currently using an older air fryer model from Costco. It’s like this model. However, the capacity is small, and the machine take up a lot of space. I’d prefer to have a toaster oven/air fryer. It can be used for multiple purposes and has a larger capacity for cooking or baking. I’ve seen really good reviews on this model.
