Bratwurst and Sauerkraut

Bratwurst and Sauerkraut is a hearty dish combining browned bratwurst sausage with tangy sauerkraut, cooked together with sliced onions, apples, and spices. The recipe uses a sweet variety of apple to complement the acidity of the sauerkraut and balances the flavors with caraway seeds, paprika, and black pepper. The bratwurst is first browned and then simmered in chicken broth with the sauerkraut and aromatics until cooked through, yielding a comforting and flavorful meal.

Description

This recipe layers flavors by first browning bratwurst sausage to develop color and flavor, then sautéing onions, garlic, and sweet apple slices that add softness and subtle sweetness. Sauerkraut is drained to avoid excess moisture, then combined with the aromatics, spices (caraway seeds, paprika, black pepper), and chicken broth to create a flavorful cooking liquid. The browned bratwurst is nestled into this mixture and simmered until fully cooked, allowing flavors to meld and the sausage to absorb some tangy and spiced notes from the kraut and broth.

The dish offers a balance of savory, tangy, and sweet tastes with tender sausage and softened sauerkraut and fruit. It’s a suitable main course served warm and can be complemented with bread or potatoes. Using a sweet apple enhances the depth of flavor by offsetting sauerkraut’s acidity.

Choosing a sweet apple variety, such as Gala, is recommended to complement and balance the sourness of the sauerkraut without overpowering it. This careful ingredient pairing makes the dish more harmonious and enjoyable.

Ingredients

Servings
  • 1 yellow onion $0.28
  • 1 apple $0.41
  • 2 cloves garlic $0.16
  • 1 Tbsp neutral cooking oil $0.04, generic cooking oil
  • 19 oz. bratwurst $3.49, 5 links
  • 24 oz. sauerkraut $1.69
  • 1/4 tsp caraway seeds $0.02, optional
  • 1/4 tsp paprika $0.02
  • 1/4 tsp black pepper $0.02, freshly cracked
  • 1 cup chicken broth $0.13

Instructions

  1. Slice the onion and the apple, and mince the garlic.
  2. Add the cooking oil to a large deep skillet or wide pot. Heat over medium. When the pan and oil are hot, add the bratwurst. Cook on each side until well browned (it does not need to be cooked through at this point). Remove the browned bratwurst to a clean plate.
  3. Add the sliced onions, apples, and garlic to the pan and sauté for about 5 minutes, or until the onions are soft.
  4. Drain the sauerkraut and add it to the skillet, along with the caraway seeds, paprika, pepper, and chicken broth. Stir to combine with the apples and onions. Nestle the browned bratwurst down into the sauerkraut.
  5. Place a lid on the pan and allow the broth to come up to a simmer. Lower the heat slightly and continue to simmer the bratwurst in the sauerkraut and broth for 20 minutes, or until the bratwurst is cooked through. Serve hot.

Notes

  • Use a sweet apple variety like Gala for the best balance alongside sour sauerkraut.
