Ingredients
Bacon Rolled Up
- 1 package thick cut bacon
- 2 tablespoon Dijon mustard
Seasoning Mix
- 2 tablespoon brown sugar
- 1 teaspoon red pepper flakes
- ½ teaspoon black pepper
Breakfast Meatballs
- ½ pound pork sausage ground breakfast sausage
- 6 large eggs
- ¼ cup milk
- ¾ teaspoon salt to taste
- ½ teaspoon pepper to taste

Instructions
- Preheat the oven to 400 degrees.
- Lay bacon strips onto a parchment lined baking sheet and brush each strip with dijon mustard.
- Combine brown sugar, red pepper flakes, and pepper in a small bowl or ramekin. Sprinkle ½ of the seasoning over the dijon mustard.
- Flip bacon over and roll up the bacon.
- Next, add sausage to a bowl with salt and pepper. Form into 1 inch balls. Use a cookie scoop for uniform sizes.
- Add the breakfast sausage meatballs to the baking sheet with rolled up bacon.
- Place baking sheet in the oven on the center rack and bake for 10 minutes.
- Spray a mini-muffin tin with non-stick cooking spray. Combine eggs, milk, and a pinch of salt and pepper in a bowl and whisk well. Pour eggs into the muffin tin and fill each ½ way . Add to the oven and bake for 15 minutes. *if you have an egg bite mold, you can also use this in place of the muffin tin*
- Sprinkle the bacon with the remaining seasoning and flip the sausage balls over. Place back into the oven and bake for 10 more minutes
- Prepare skewers by alternating sausage, bacon, and eggs.
- Drizzle with sriracha if desired. Enjoy!

- We used a silicone egg bite mold and filled the molds up halfway. A muffin tin will also work in a pinch.
- Because cooking times may vary, I suggest that when the bacon is taken out and seasoned a second time decide how much longer it needs to cook based on how done the bacon rolled up looks. Keep an eye out to avoid bacon from becoming too well done.
- Use flat and wide skewers to prevent the ingredients from spinning.
- Serve with a dip like marinara, barbecue, or even a maple syrup.
- Using a 2 tablespoon cookie scoop or spoon will help you make evenly sized 1 inch meatballs, which will cook more evenly.
