Breakfast Taquitos are the perfect easy breakfast recipe, made with chorizo, or soyrizo for vegetarians, scrambled eggs & pepper jack cheese!

Ingredients
- 6 eggs
- ¼ cup milk
- ½ tsp salt
- ½ tsp black pepper
- 12 oz soyrizo or chorizo
- 1 cup pepper jack cheese shredded
- 12 small flour tortillas
Optional Toppings
- salsa
- queso fresco
- guacamole
- diced tomatoes
- cilantro

Instructions
- Preheat the oven to 425°F.
- Whisk the eggs, milk, salt and pepper together in a small bowl.
- Heat a skillet over medium heat and scramble the eggs, then set aside.
- While the eggs are scrambling, cook the soyrizo, or chorizo for 6-8 minutes in a separate skillet over medium heat.
- Once the eggs are scrambled and soyrizo is cooked, begin assembling the taquitos.
- Place a spoonful of eggs and spoonful of chorizo in the middle of each tortilla.
- Sprinkle with the pepper jack cheese.
- Roll up tightly and place seam side down on a baking sheet.
- Place in the oven and bake for 12-15 minutes.
