Brioche French Toast Casserole

This brioche French toast casserole has a creamy custard with a sweet brown sugar cinnamon top that's perfect for brunch or a holiday! It's cozy enough to make on a weekend, and gooey enough to hold it's own for a special breakfast.

Ingredients
- 1 loaf brioche bread stale or dried, if it's fresh see notes.
- 8 large eggs
- 2 cups milk 2 % or whole milk produces the richest French toast
- 10 tablespoons brown sugar divided
- 1 ¼ teaspoons cinnamon divided
- 2 teaspoon vanilla
- ¼ teaspoon salt
- 4 tablespoons butter melted
Instructions
- Spray a 9x13 baking dish with spray cooking oil. Cube bread into 1-2 inch pieces.
- In a medium bowl add eggs, milk, ¼ cup brown sugar, vanilla, 1 teaspoon cinnamon and salt. Whisk together egg and milk custard until well blended.
- Spread bread cubes in the pan and pour the egg custard over the bread pieces. Cover and refrigerate the casserole for at least 30 minutes, or overnight.
- Preheat the oven to 350 degrees.
- Mix together 2 tablespoons brown sugar, ¼ teaspoon cinnamon and 4 tablespoons of melted butter in a small bowl. Drizzle the melted butter mixture over the French toast casserole.
- Place the casserole in the oven. Bake for 30-35 minutes until egg custard mixture is cooked all the way through in the center. Serve and enjoy! Dust the casserole with powdered sugar with fresh fruit, maple syrup or your favorite toppings.
Notes
- The bread will work best for this casserole if it is stale or dried out so it soaks up the custard but doesn't become mushy.
- You can cut bread into slices before cubing and place in the toaster to toast it to help dry it out.
- You can also bake the bread to help dry it out, place the bread cubes on a sheet pan. Set the oven to 350 degrees. Toast bread for 10-15 minutes, stirring at least once until bread feels crunchier. Then you can continue to add the bread cubes to the casserole.
