Bruschetta Chicken Pasta
Description
Bruschetta Chicken Pasta melds seasoned, seared chicken breasts with a tomato sauce inspired by traditional bruschetta toppings. The chicken is seasoned with garlic powder, basil, oregano, salt, and pepper, then cooked in olive oil before being sliced or shredded. The sauce is made by sautéing garlic and onion, then cooking chopped Roma tomatoes (and optionally cherry tomatoes) with dried Italian herbs and fresh basil. The cooked pasta, either spaghetti or bow tie, is mixed with balsamic glaze and freshly grated Parmesan or Romano cheese to complement the savory sauce and chicken. This blend of herbs, fresh tomatoes, and well-seasoned chicken gives the dish a layered flavor profile enhanced by the balsamic’s acidity and the richness of the cheese.
The dish serves well as a main course and can be complemented with a simple green salad or steamed vegetables for added freshness. The use of fresh Parmesan or Romano cheese strengthens the dish’s flavor, making each bite savory and satisfying. When preparing, you can adjust the tomato types between Roma and cherry tomatoes according to preference. The balsamic glaze used can be homemade or store-bought. Ingredients
- 1 pound pasta spaghetti or bow tie
- 1 - 2 tablespoon balsamic glaze
- ½ cup Parmesan Cheese freshly grated, or romano cheese
- ¼ cup basil fresh leaves
For Bruschetta Sauce -
- 4 cloves garlic minced
- ½ onion finely chopped
- 7 Roma tomatoes chopped, ripe
- 1 cup cherry tomatoes sliced into half (optional, ripe
- 2 tablespoon extra-virgin olive oil
- salt to taste
- black pepper to taste
- 2 teaspoon basil dried
- 2 teaspoon oregano dried
- 1 teaspoon rosemary dried
- ½ cup basil fresh
For Chicken –
- 1 pound chicken breast
- salt to taste
- black pepper to taste
- 2 teaspoon garlic powder
- 1 teaspoon basil dried
- 1 teaspoon oregano dried
- 2 tablespoon extra-virgin olive oil
Instructions
Sear Chicken :
- Season chicken breasts with salt, pepper, garlic powder and Italian herbs as per your taste. Sprinkle seasoning on both sides, rub to spread evenly.
- Heat olive oil in cast iron skillet. Place chicken breasts. Sear and cook on both sides on medium low flame.
- Once chicken breasts are cooked completely, remove it on to a plate. Slice it into as small or big piece. You can even shred the cooked chicken, your choice!
Bruschetta Sauce:
- Into the same skillet, add few more teaspoons of olive oil. Saute garlic, onions on medium low flame.
- Add chopped ripe roma tomatoes into the pan. Saute and cook until tomatoes are softened.
- Note – I added cup of halved cherry tomatoes as well. This step is completely optional.
- Season the sauce with salt, pepper and dried Italian herbs to your taste. Add as much or as little as you want.
- To enhance the flavors of the sauce, a cup of fresh basil (torn roughlis added. Saute for a minute. Turn off flame and leave the sauce aside.
Prepping Pasta:
- Meanwhile cook pasta of your choice as per packet instructions. Make sure to cook to al-dente.
Toss :
- To cooked pasta, add bruschetta sauce. Toss to coat. Add chopped (shreddechicken on top. Drizzle balsamic glaze.
- Give a generous sprinkle of freshly grated cheese on top.
- Serve immediately hot. Or refrigerate upto an hour before serving. Taste delicious both hot and cold.
Notes
- The balsamic glaze provides a sweet and tangy contrast and can be purchased or made by reducing balsamic vinegar with brown sugar.
- Mixing Roma and cherry tomatoes adds texture variation but you may use only Roma tomatoes if preferred.
- Freshly grated Parmesan or Romano cheese is preferred for optimal flavor and texture.
