These buffalo meatballs are perfect appetizer to serve on game day or a fun weeknight dinner. Juicy baked chicken meatballs dunked or drizzled with a spicy buffalo hot sauce and blue cheese dressing!

Ingredients
Chicken Meatballs-
- 1 lb ground chicken
- ½ cup panko breadcrumbs
- 1 egg
- 3 garlic cloves minced
- 2 green onion minced
- 1 celery finely chopped
- 1 carrot minced
- ½ teaspoon paprika
- salt & pepper to taste
- Olive oil to spray about 2 tablespoon
For Buffalo Hot Sauce-
- 1 stick butter
- ¾ cup hot sauce
- ½ teaspoon garlic powder
Garnish-
- Blue cheese dressing & blue cheese crumbs
- green onion
Instructions
- Buffalo chicken meatballs starts with mixing all ingredients in a bowl. Add all ingredients for meatballs – ground chicken, panko breadcrumbs, lightly beaten egg, minced green onion (white and green part included), minced garlic, finely diced celery, minced carrot, paprika, salt and ground pepper to taste.
- Using hand or spatula mix ingredients together. DO NOT OVER MIX. That’s a secret to juicy meatballs. Overmixing will result into drier meatballs.
- Using a small scoop or spoon portion meat.
- Roll meatballs.
- Place it on greased baking tray.
- Spray olive oil on meatballs before baking and once or twice in between baking time. This will prevent meatballs from turning dry.
- Bake in pre heated oven at 400°F for 20 to 25 minutes or until cooked through.
- While the meatballs are cooking, we will make buffalo sauce.
- Melt a stick of butter in a pan. Add hot sauce and garlic powder.
- Whisk together. Remove from heat. Continue to whisk until everything blends together.
- When meatballs are done cooking, remove from oven and let it rest for 5 minutes.
- You can either dunk meatballs in prepared buffalo hot sauce or drizzle it over the meatballs. Either way these are lip smacking good!
- I prefer to drizzle buffalo chicken meatballs with buffalo hot sauce and blue cheese dressing on top.
- Garnish with blue cheese crumbs on top and green onions.
- Serve immediately.
Notes
- I used small oxo scoop to shape meatballs. It yields 24 small cocktail meatballs.
