Ingredients
- 2 tablespoons lemon juice
- 3 cloves garlic (smashed)
- 1 cup Greek yogurt
- ½ cup finely grated Parmesan cheese
- ¼ cup light mayonnaise
- 3 anchovy fillets (minced)
- 1 ½ teaspoons Dijon mustard
- ½ teaspoon freshly ground black pepper (or more to taste)
- crudites (for serving)
Instructions
- Place the lemon juice in a small dish and add the smashed garlic cloves.
- Set aside to allow the garlic to infuse the lemon juice for at least 15 minutes.
- Meanwhile, combine all the other ingredients in a bowl.
- After 15 minutes, use a fork or small sieve to strain and discard the smashed garlic.
- Add the lemon juice to the dip and stir to incorporate. If needed, season with more pepper or a little salt.
- Serve at room temperature or chilled with your favorite crudites; it will keep in the fridge for up to 5 days.
Notes
- I like the taste of full fat yogurt, but if you prefer 0% feel free to swap. The weight watchers points with be 2 instead of 3.
