Ingredients
- 6 hard boiled eggs (see directions in post for perfect hard-boiled eggs)
- 1/2 cup mayo
- 1 tbsp Dijon mustard
- 1 1/2-2 tbsp Sliced scallions
- 1/8 tsp cayenne pepper add more to make it more spicy
- 1/8 tsp onion powder
- 1/2 tsp smoked paprika
- 1 pinch white pepper
- 1/4 tsp dried thyme rubbed between your hands
- salt & black pepper to taste
- OPTIONAL ADDITIONS Louisiana-style hot sauce, relish, pickles, celery, onion
Instructions
- Chop and mash hard boiled eggs to your desired consistency. Add all the other ingredients and mix until combined. Make it extra flavorful by adding your favorite additions: hot sauce, celery, onion, pickles, or relish.
Notes
- This recipe has just a hint of heat from the cayenne pepper. To make it totally mild, omit the cayenne pepper. To make it spicier, add more cayenne pepper or some hot sauce to taste.

- This egg salad will last 3-4 days in an air-tight container in the refrigerator.
