Cajun Shrimp Foil Packets
Description
This dish layers bite-size red potatoes, corn pieces, peeled or unpeeled shrimp, and smoked sausage chunks distributed among foil sheets. Melted butter and chicken broth help keep the ingredients moist during cooking. The Cajun seasoning adds a spicy, savory profile balanced by salt and black pepper. Sealing the foil packets traps steam, cooking everything evenly and infusing the flavors.
Cooking on a grill at 400ºF or baking in an oven at the same temperature for 30-40 minutes cooks the potatoes tender without overcooking the shrimp or sausage. Flipping partway ensures even heat distribution. The result is a combination of smoky sausage, sweet corn, tender spiced shrimp, and soft potatoes that meld well together.
This meal can be served straight from the foil for an easy cleanup and rustic presentation. It’s suitable for outdoor grilling or indoor baking occasions.
To expedite potato cooking, parboiling or cutting into smaller pieces is recommended. Choosing gluten-free chicken broth keeps the dish gluten-free. Marinating the shrimp beforehand adds extra flavor.
Ingredients
- 18 pieces corn 6 full cobs cut in half or in thirds, on the cob
- 4 potato washed and cubed, red
- 25 Shrimp peeled or not, it's up to you, uncooked
- 1 pound smoked sausage cut into chunks
- 1/2 cup butter or olive oil, to taste, melted
- 1/2 cup chicken broth you may not need that much
- Cajun seasoning we like to use Tony Chachere's brand, to taste, or Creole seasoning
- salt to taste
- black pepper to taste

- Italian sausage
- chicken (cut in bite size pieces)
- bell pepper
- mushrooms
- red onions
- celery
- carrot
Instructions
- Heat grill to 400-degrees. You can do this in your oven at the same temperature. Bring all the ingredients to your work area.
- Evenly distribute corn, potatoes, shrimp, and sausage between 4 heavy-duty foil sheets (approximately 12x18 inches each). Drizzle melted butter and about 2 tablespoons chicken broth over each foil packet. Season evenly and generously, to taste, with Cajun seasoning, salt, and pepper.
- Tightly seal foil packets by folding up the sides over the contents and tightly folding up the ends over the seam.
- Grill 30-40 minutes or until potatoes are tender, flipping once half-way through
- Serve immediately. (Be careful the steam is HOT)
Notes
- Pre-cook potatoes by boiling or microwaving briefly to ensure tenderness in foil packets.
- Smaller potato cubes cook faster and more evenly in this recipe.
- Foil packets can be baked indoors at 400ºF instead of grilled for convenience.
