Carne Guisada [Recipe + Video] Carne de Res Guisada Braised Beef
Description
This Carne Guisada recipe begins by seasoning cubed beef with black pepper, oregano, salt, and lime juice, allowing the flavors to permeate the meat during a resting period. The beef is browned in oil over high heat to develop a flavorful crust before being slowly cooked over medium-low heat with periodic additions of water until it becomes very tender. This slow cooking process can last from 35 minutes up to 1½ hours depending on the cut of beef.
Once the meat is tender, chopped bell peppers, onions, tomatoes, and mashed garlic are added and cooked until softened. Tomato sauce and additional water are then incorporated and reduced to create a light, flavorful sauce that coats the beef pieces. Parsley is sprinkled at the end for a fresh finish.
Carne Guisada is hearty with tender beef chunks in a mildly spiced tomato-based sauce. It works well served with rice, tortillas, or bread to soak up the sauce. The lime juice adds a subtle tang that brightens the overall flavor.
