  • 2 pounds beef chuck roast cubed
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon brown sugar
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 large onion diced
  • 1 large red bell pepper diced
  • 28 ounces canned whole tomatoes crushed

Instructions

  1. Season cubed beef with salt, chili powder, cumin, coriander, paprika, oregano, black pepper, and brown sugar.
  2. Let the beef marinate for at least 10 minutes to absorb the flavors.
  3. Heat olive oil in a large pot over medium-high heat. Add garlic, onions, and red bell pepper, cooking until softened. Add the marinated beef and cook until browned.
  4. Stir in crushed tomatoes and bring to a boil. Reduce heat and simmer for about 1 hour, until beef is tender and flavors meld.
