Carrot Top Pesto

Report
Carrot Top Pesto uses carrot green leaves blended with fresh basil, pine nuts, grated parmesan, olive oil, salt, and pepper. This pesto offers an herbaceous, nutty sauce utilizing a less common leafy ingredient, with a bright green color and rich flavor suited for pasta, spreads, or dressings.

Description

This Carrot Top Pesto combines fresh carrot greens, basil, pine nuts, Parmesan cheese, and olive oil into a vibrant green sauce. The carrot tops provide a unique herbal note with slight bitterness balanced by the nutty pine nuts and salty parmesan. The sauce’s consistency is adjusted by gradually adding olive oil while blending.

The method involves processing the greens and ingredients in a food processor until finely minced, then slowly incorporating olive oil to reach the desired texture. Seasoned with sea salt and black pepper, this pesto can replace traditional basil pesto or be used in similar ways such as tossing with pasta, spreading on bread, or as a dip.

Using carrot tops reduces food waste by utilizing parts of vegetables often discarded. Alternative nuts or seeds like sunflower or pumpkin seeds can be substituted if pine nuts are unavailable. Some recommend blanching carrot tops to soften bitterness, though it’s optional.
