Quick, easy, and so flavorful, this Cashew Chicken stir fry features tender bites of chicken and crunchy toasted cashews tossed in a sticky, savory-sweet garlic sauce. Perfect for weeknight dinner!

Ingredients
For the sauce
- 2 tablespoons soy sauce
- ¼ cup hoisin sauce
- 1 teaspoon Sriracha sauce
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon honey use more or less, to taste
- ⅔ cup water
- 1 cup toasted salted whole cashews
To make the cashew chicken
- 1¼ pounds boneless skinless chicken breasts, cut into 1½" pieces
- 1 teaspoon Morton kosher salt
- ½ teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 6 large garlic cloves minced

Instructions
- For the sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, sriracha sauce, rice vinegar, cornstarch, honey, and water. Set aside.
- For the cashew chicken: Place chicken pieces in a bowl and season with salt and pepper.
- Heat a large skillet over medium-high heat. Once hot, add olive oil.
- When olive oil starts to shimmer, add chicken to the skillet and cook until browned and cooked through, about 8-9 minutes. When chicken is nearly done, stir in the minced garlic and cook for the final minute.
- Stir the prepared sauce, then pour it over the cooked chicken and stir until the chicken is coated.
- Reduce heat to medium/medium-low and simmer for 3-5 minutes, or until sauce thickens.
- Stir in the cashews and simmer just a bit more.
- Serve over rice, topped with chopped green onion and sesame seeds, if desired.
Notes
- If the sauce is thicker than you'd prefer, add a bit more water. If thinner than you'd prefer, thicken with additional cornstarch - make a cornstarch slurry by whisking together 2 tablespoons water and 2 tablespoons cornstarch in a small cup. Then stir some of the slurry into the simmering cashew chicken sauce, adding a little at a time until desired thickness is reached.
