Cauliflower Polenta

Cauliflower Polenta blends riced cauliflower cooked with polenta in vegetable broth into a creamy, cheesy dish enriched with mascarpone and Parmesan. The dish combines the texture of polenta with the mild flavor and lightness of cauliflower for a comforting side or base.

Description

This recipe starts by bringing vegetable broth and riced cauliflower to a boil, then slowly whisking in polenta to prevent lumps. Cooking over low simmer for 15 to 20 minutes softens the polenta and cauliflower blend.

Mascarpone and grated Parmesan cheeses are stirred in to add richness and creaminess, with salt and pepper seasoning to taste. The resulting dish has a smooth texture characteristic of polenta, enhanced by the subtle vegetable notes of cauliflower.

The cauliflower adds a light, slightly sweet dimension complementing the cheese, while the broth base imparts flavor without heaviness. Toppings like marinara sauce or additional cheese can customize the dish for different meals.
