Description
This recipe starts by bringing vegetable broth and riced cauliflower to a boil, then slowly whisking in polenta to prevent lumps. Cooking over low simmer for 15 to 20 minutes softens the polenta and cauliflower blend.
Mascarpone and grated Parmesan cheeses are stirred in to add richness and creaminess, with salt and pepper seasoning to taste. The resulting dish has a smooth texture characteristic of polenta, enhanced by the subtle vegetable notes of cauliflower.

Ingredients
- 3 cups vegetable broth reduced sodium or chicken broth
- 1 bag (12 oz) riced cauliflower frozen, used a cauliflower and sweet potato blend
- ½ cup polenta or cornmeal
- 3 tablespoons mascarpone cheese
- ¼ cup Parmesan Cheese grated

Instructions
- Pour the broth and the vegetables into a large saucepan and bring to a boil. Once boiling, pour the polenta in slowly, whisking continuously to prevent lumps. Lower the heat to a low simmer and simmer for 15-20 minutes until cooked.
- Stir in the mascarpone and Parmesan cheeses. Season the dish with salt and pepper to taste.
