  • 2 pounds sweet potato peeled and cut into 1" chunks
  • 1/2 cup butter cubed, unsalted
  • 1/2 cup brown sugar packed
  • 1/4 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 16 ounces miniature marshmallows optional

Instructions

  1. Preheat oven to 400 degrees and toss the sweet potatoes, butter, brown sugar and salt and place in 9x13 pan or on a baking sheet.
  2. Sprinkle over the cinnamon evenly and bake for 50-60 minutes or until fork tender and if using marshmallows pile on after cooking and broil 6 inches away from top broiler for 30-40 seconds until browned.
