Broccoli Casserole

This Broccoli Casserole features broccoli and diced onion mixed with melted butter, cream of mushroom soup, mayonnaise, eggs, and cheddar cheese. Topped with additional cheese and crushed Ritz crackers, it bakes into a creamy, cheesy dish with a crunchy topping, blending soft broccoli textures with savory flavor, making a classic side or comfort food accompaniment.

Description

The Broccoli Casserole combines fresh broccoli florets and diced onion steamed briefly until tender-crisp, then mixed with melted unsalted butter, condensed cream of mushroom soup, mayonnaise, eggs, salt, pepper, and shredded cheddar cheese. This mixture creates a rich and creamy filling that cooks into a cohesive casserole.

Before baking at 350°F, the casserole is topped with extra shredded cheddar and finely crushed Ritz crackers, which provide a golden, crunchy crust contrasting the tender broccoli and creamy interior. The dish offers a balance of creamy, savory, and mildly crunchy elements.

This casserole works well alongside roasted or grilled meats as a hearty side dish. It can be prepared ahead and baked just before serving. The combination of mushroom soup and mayonnaise adds a moist richness, while eggs help bind the casserole.
