Chai Spiced Pancakes

These Chai Spiced Pancakes are light, fluffy, and bursting with flavor. Topped with a whipped vanilla mascarpone, sweet maple syrup, and fresh berries – they’re simply irresistible!

Ingredients

  • 1 ½ cups chai tea latte concentrate Oregon brand
  • 2 cups gluten-free baking flour or all-purpose baking flour
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 cup mascarpone cheese
  • 1 tbsp brown sugar
  • 1 tsp vanilla extract
  • 2 cups strawberries
  • 1 cup blackberry

Instructions

  1. Combine all of the dry pancake ingredients in a large mixing bowl – flour, baking powder baking soda, salt, and white sugar.
  2. Slowly pour in the Oregon Chai Tea Latte Concentrate, stirring to combine. Mix until well combined into a loose batter.
  3. Heat a pancake griddle or large non-stick pan over high heat. Spray with cooking spray.
  4. Spoon pancake batter onto griddle in ¼ cup scoops.
  5. Cook each pancake for 2-3 minutes, then flip and cook for an additional 1-2 minutes. Pancakes should be a light, golden brown when they’re done.
  6. Remove pancakes from heat and set aside.
  7. In a small bowl, combine the mascarpone cheese, brown sugar, and vanilla extract. Whip with a fork until well combined and slightly fluffy.
  8. Stack pancakes on serving dishes. Drizzle with maple syrup, then top with a dollop of whipped vanilla mascarpone and fresh berries.
