Description
Champorado combines glutinous rice and tablea, traditional Filipino chocolate tablets, cooked together in boiling water. As the rice gelatinizes and softens, it thickens the liquid, producing a porridge textured with tender, slightly sticky grains. The tablea melts uniformly, enriching the mixture with a deep chocolate taste.
Sugar is added to balance the bitterness of the chocolate, and the cooking continues until the rice becomes translucent and the consistency is reduced to a creamy thickness. The serving is completed with a drizzle of evaporated milk that adds a silky richness and slight creaminess, complementing the chocolate.
It's typically served hot and can be eaten alone or accompanied by dried salted fish for a traditional taste contrast, although this serving suggestion is not described here.
If glutinous rice flour is unavailable, regular long-grain rice can be used with the addition of rice flour mixed with water to mimic the creamy, thickened texture by simmering the mixture after incorporating the slurry.
Ingredients
- 5 cups water
- 1 cup glutinous rice
- 4 pieces tablea chocolate
- ½ cup sugar
- ½ cup evaporated milk
Instructions
- In a deep pot over medium heat, add water and bring to a boil.
- Add rice and stir to distribute. Lower heat and continue to cook, stirring occasionally, until rice begins to expand.
- Add tablea and cook, stirring regularly, until chocolate has melted.
- Add sugar and continue to cook, stirring regularly, until dissolved.
- Continue to cook until rice is translucent and liquid is reduced to desired consistency.
- Ladle onto bowls, drizzle with evaporated milk and serve hot.
Notes
- If glutinous rice is unavailable, use regular long-grain rice and thicken the champorado by whisking in a rice flour-water slurry, simmering until desired consistency.
