Charsi Chicken Karahi

Charsi Chicken Karahi is a spiced dish featuring chicken cooked in oil with garlic paste, green chili, tomatoes, ginger, salt, and black pepper. The chicken is simmered until it changes color, followed by sautéing the aromatics and cooking the tomato topping until peeled. The dish finishes with additional spices and is served hot, traditionally alongside naan bread.

Description

The recipe begins with cooking chicken in neutral oil and salt until the meat turns white, indicating it is partially cooked. Excess oil is drained before adding green chilies and garlic paste for quick sautéing, imparting a pungent, spicy aroma. Halved tomatoes placed skin-side down on the chicken and covered facilitate softening and easy peeling, which is done with tongs. The mixture is then cooked on high heat to reduce excess water, intensifying the flavor and thickening the dish.

Seasoned with black pepper and julienned ginger, Charsi Chicken Karahi balances spiced warmth with fresh elements. The method results in tender chicken with a rich, oil-infused sauce that highlights garlic, chili, and tomato notes. Serving it immediately with homemade naan bread complements the dish by providing a soft, warm accompaniment to scoop up the flavorful sauce.

This dish fits well as a main course for dinner or lunch when a hearty, spiced chicken option is desired. The rich oil base means reheating should be done carefully to maintain texture and flavor.
