Cheddar Garlic Mashed Potato Casserole is loaded with creamy mashed potatoes, garlic and cheddar. The flavor is incredible and they can even be made the night before!

Ingredients
- 4 pounds peeled and chopped potatoes, russet or Yukon gold
- 1 (8-ounce) package softened cream cheese
- ½ cup unsalted butter, cubed
- ½ cup sour cream
- ¼ cup milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 cups shredded cheddar cheese, divided
- 6 lices cooked and crumbled bacon
- 2 tablespoons minced chives
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray.
- Fill a large pot with water and add 4 pounds peeled and chopped potatoes,. Bring the water to a boil and cook the potatoes for 15-20 minutes until tender. Drain the water and place the potatoes in a large bowl.
- Add 1 (8-ounce) package softened cream cheese , ½ cup unsalted butter, ½ cup sour cream, ¼ cup milk, 1 teaspoon garlic powder, 1 teaspoon salt, and ½ teaspoon pepper. Use an electric hand mixer to mix the ingredients.
- Fold in 1 ½ shredded cheddar cheese. Spread the potato mixture into the prepared baking dish then top with the remaining ½ cup shredded cheddar cheese.
- Bake uncovered for 40-45 minutes or until heated through. Top with 6 slices cooked and crumbled bacon and 2 tablespoons minced chives.
Notes
- You can also make this the night before. Just cover up to one day.
