Cheese latkes

These Cheese Latkes blend cream cheese and cottage cheese with flour, egg, sugar, and flavorings to form a batter cooked in a hot skillet until golden brown and crispy on the outside with a soft, creamy interior. The mildly sweet and slightly tangy latkes pair well with cinnamon sugar, maple syrup, or jam and sour cream for varied serving options.

Description

The mixture of cream cheese and cottage cheese provides moisture and creaminess, while flour and egg bind the batter. Sugar and vanilla add sweetness and aroma, complemented by a small amount of baking powder for slight lift. The batter is processed to keep some texture but ensure even cooking.

Latkes are fried in batches to avoid overcrowding, allowing for a crispy outside crust while maintaining a tender inside. The even browning and soft center create a pleasant contrast in texture. The recipe suggests sweet toppings like cinnamon sugar, maple syrup, or jam, and savory sour cream as serving options to suit different tastes or occasions.

Ingredients

Servings
  • 2 oz cream cheese (2oz is approx ¼ cup)
  • ½ cup cottage cheese
  • ½ cup all-purpose flour plain flour
  • 1 egg
  • 2 tablespoon sugar
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract

Instructions

  1. Put everything in a food processor and blend so they are well combined but still with a little bit of texture.
  2. Warm a medium-large skillet or griddle over a medium heat and brush lightly with oil. Drop tablespoonfuls of the mixture on to the pan spreading out slightly in to circles with the back of the spoon. Only cook around 4-6 at a time to save overcrowding the pan.
  3. Cook for around 2-3 minutes on the first side until you can see it starting to brown slightly around the edge. Flip over then cook another minute or two on the other side. Both sides should be a nice golden brown.
  4. Repeat with the rest of the mixture then serve with cinnamon sugar, maple syrup or jam and sour cream, as you prefer.
