Cheesy Bacon Bites

Cheesy Bacon Bites are so addictive! All you need is some bread, cream cheese, more cheese, bacon and seasonings and you have the perfect appetizer!

Ingredients
- 8 ounces cream cheese, your favorite variety, softened
- 1 ½ cups cheese, shredded
- 6 lices bacon, finely chopped and cooked until crisp
- 3 tablespoons green onions, diced
- 3 tablespoon garlic, minced
- 12 lices white sandwich bread, remove crusts
- 12 lices bacon, cut in half
- cooking spray
- toothpick

- 1-2 teaspoons jalapenos, diced
- 1 tablespoon hot sauce
Instructions
- Preheat your oven to 375 degrees. Prepare a rimmed baking sheet with tinfoil and a wire rack. Coat your wire rack lightly with cooking spray and set aside.
- Using your handheld or stand mixer blend cream cheese and cheddar cheese together until smooth. Add crisp bacon, green onions, garlic, and jalapenos or hot sauce if using. Continue to whip until incorporated. Taste mixture just to make sure you don't want to add more of anything else, like ht sauce for example.
- Grab a rolling pin or a large round jar and place it at your workstation. First you must cut all of the crusts off of your bread slices. I usually give the crusts to our birds. Regardless of what you do with them we will not need the crusts for this recipe!
- Using one slice of bread at a time roll out the slice as thin as you can get it. I usually end up with each slice being about ⅛ of an inch thick. Next, spread two or three spoonfuls of the cream cheese mixture on top of each slice . Choose and edge and roll the slice up, jellyroll style, as tightly as possible. Repeat this process with all of your slices.
- Now you have to take each rolled up slice of bread and wrap it tightly with one slice of bacon. The goal is to try to cover the bread completely. Using a toothpick secure the bacon in place. Wrap each rolled bread slice up with bacon and secure with a toothpick.
- Now you have to place all of your Cheesy Bacon Bites on your prepared rack and pan, as evenly spaced as possible. Bake for 45 minutes, flipping over and adjusting at least once halfway through baking. Bacon must be cooked. Allow Bites to cool for at least 5 minutes before serving. The cheese inside will be very hot. Serve with ranch dip or whatever your heart desires! We usually enjoy these just as they are! Enjoy!
