Cheesy Baked Shrimp Dip

Creamy, cheesy and garlicky, this baked shrimp dip tastes like a dip-able version of shrimp scampi!

Ingredients

  • 3 Tbsp olive oil
  • 2 lbs. large peeled and deveined shrimp cut into small bite-sized pieces
  • 6 cloves garlic minced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/4 cup dry white wine
  • 16 oz cream cheese softened
  • 1/2 cup mayonnaise
  • 1 1/2 cups shredded Mozzarella cheese
  • 1/2 cup grated parmesan
  • 2 lemons zested and juiced
  • 3 Tbsp fresh parsley minced

Instructions

Prepare

  1. Preheat oven to 350°F.  Butter an 8x8" baking dish (or spray lightly with cooking spray) and set aside.

Cook shrimp

  1. Add olive oil to large skillet and heat over MED heat.  Add shrimp, minced garlic, salt, pepper, and red pepper flakes. 
  2. Cook shrimp, stirring often, 3 minutes, until shrimp is almost cooked.  Add wine and stir it around, letting it cook off, for 1 minute, or until wine is mostly gone.

Make dip

  1. Add cream cheese, mayonnaise, mozzarella, Parmesan, lemon zest and juice, and parsley to a large mixing bowl.  Stir well to combine.  Add the cooked shrimp and if desired, season with a pinch of additional salt and pepper.

Bake

  1. Transfer dip to prepared baking dish and bake in preheated oven for 30-40 minutes, until hot and bubbly.  

Serve

  1. Serve hot, with desired dippers (crackers, slices of toasted bread, veggies, etc).

Notes

  • Slow Cooker Directions:
  • I've estimated this dip will serve about 12, but please feel free to divide it up into as many servings as you'd like.
  • For an extra cheesy dip, additional mozzarella and Parmesan cheese can be added on top of the dip before baking.
  • Dip can be doubled (just double all the ingredients), and baked in a 9x13" baking dish. Add about 10 minutes to the baking time.
  • Cook shrimp according to directions above.
  • Mix up the dip in the insert of a slow cooker, then stir in the cooked shrimp.
  • Cover and cook on LOW for about 2 hours, or until hot and bubbly.
