Ingredients
- 1 pound or cauliflower
- 1 ½ cups chicken broth
- ½ cup diced sized onion
- ¼ cup mayonnaise
- ¾ cup cream cheese
- ½ teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon ground black pepper
- ½ teaspoon salt
Instructions
- Simmer the cauliflower and half an onion in chicken broth until soft and tender. Stir in the cumin, chili powder, garlic powder, pepper and salt.
- Cut up chunks of cream cheese, and whisk into the cauliflower until the cream cheese melts and is no longer chunky.
- Use a stick blender, or a regular blender, to blend the mixture until it's smooth.
- Carefully whisk in the mayonnaise.
- Chill in the fridge 2-3 hours before serving.
