Cheesy Enchilada Casserole

Cheesy Enchilada Casserole layers cooked egg noodles with spiced ground beef simmered in enchilada sauce, cream cheese, sour cream, corn, and green chiles. It is topped with melted cheddar and Monterey Jack cheese for a rich, creamy casserole with a mild southwestern flavor.

Description

This casserole starts by boiling egg noodles until tender, then draining them. Ground beef is browned and seasoned with chili powder, cumin, and cayenne pepper. Cream cheese is added to melt into the meat, creating a creamy base.

In a separate bowl, sour cream combines with enchilada sauce, half of the shredded cheddar and Monterey Jack cheeses, corn, and diced green chiles. This mixture is stirred into the beef and cooked briefly.

The noodles are folded in, and the combined mixture is transferred to a baking dish. The remaining cheeses are sprinkled over the top, and the casserole is baked until the cheese melts and the dish is heated through. The final texture combines tender pasta with a moist, flavorful meat and cheese sauce topped with golden, melted cheese.

This casserole makes a satisfying main dish and can be served with salsa or a fresh salad. Variations with shredded chicken or roast beef are possible.
