Cheesy Ham and Tomato Pasta

Ingredients
- 1 ¾ cups chicken stock
- 1 Cup chardonnay
- 2 Tbs sherry vinegar
- 5 berries Juniper crushed
- 4 sprigs rosemary chopped
- 1 large shallots diced
- 8 oz whole peeled tomatoes crush by hand
- 2 cups heavy cream
- 1 lb cooked ham cubed or slices, your choice
- 8 oz Ball of Fresh Mozzarella
- ½ cup grated fresh Parmesan cheese

Instructions
- Preheat oven to 400.
- Bring stock, wine, vinegar, berries, rosemary and shallots to a boil in a 9-10inch oven proof skillet over medium-high heat. Simmer until able to reduced to ½ cup.
- Stir in the tomatoes and cook for 5 minutes.
- Stir in the cream, salt and pepper, simmer stirring occasionally until thickened 10-12 minutes.
- Add the slices of ham in the skillet – spreading them out over the skillet .
- Sprinkle the top with first parmesan and then mozzarella.
- Bake in the oven until the ham is heated through and the cheese is melted and bubbly – about 30 minutes. Serve immediately over fresh cooked pasta.
Notes
- This recipe calls for Chardonay, if you are opposed to using wine in your dish, use added chicken stock instead.
- When you are first trying this recipe, it seems a little overwhelming. It isn't. Just put your ingredients out where you can reach them and remember the recipe in terms of basic steps. Create the sauce first, cook the wine and other ingredients down by half, add the tomatoes, add the ham, add the cheeses and throw it in the oven. It's really that easy.
- Juniper berries add a special flavor to this dish and really set it off.
- You'll want to use a pasta that has plenty of little grooves to catch the sauce. That's a special treat.
- Save some of the pasta water. If your tomato sauce isn't as thin as you like, add pasta water ¼ cup at a time until it is as thin as you prefer.
