Description
Cheesy Jalapeño Bacon Stuffed Baguette is built on a base of diced lean bacon cooked until lightly browned, combined with softened cream cheese, shredded cheddar, mozzarella, chopped jalapeños, and scallions. The mixture is packed inside a hollowed baguette, maintaining a half-inch bread wall and crust for structure. Garlic butter made from melted butter, minced garlic, and salt is brushed over the stuffed loaf before baking at 180C (350F). Baking melts the cheeses and infuses the bread with garlic flavor while crisping the crust lightly.
The combination of creamy cheeses, smoky bacon, and the mild heat of jalapeños creates contrasting textures and flavors, with chewy bread and melted cheese melding together. The jalapeños provide subtle spiciness balanced by the richness of the cheeses and bacon. Slicing the baguette before baking and keeping the slices pressed together helps maintain shape and ensures even heating.
Make-ahead options include assembling and freezing the stuffed baguette wrapped tightly in foil and plastic wrap, then baking from thawed state for best results. The removed bread can be dried and saved as breadcrumbs. Ingredients
- 1/2 tbsp neutral cooking oil generic cooking oil
- 8 oz / 250g Bacon diced (lean bacon used
- 1 baguette 20 inch / 50 cm or french stick
- 8 oz / 250g cream cheese Philadelphia brand, softened, full or low fat
- 1 cup cheddar cheese shredded
- 1/2 cup mozzarella cheese shredded
- 1/4 cup jalapeños packed, finely chopped, fresh deseeded or canned drained
- 1 cup scallions finely chopped, green and white part, or shallots; packed
- black pepper
Garlic butter
- 3 tbsp butter
- 2 garlic cloves, minced
- Pinch salt
Instructions
- Preheat oven to 180C/350F.
- Heat oil in a pan over high heat. Add bacon and cook until lightly browned. Remove onto a plate lined with a paper towel to drain excess fat. Set aside to cool.
- Cut the ends off the baguette and cut the baguette in half (or quarters - makes it easier to stuff).
- Use a long knife (preferably bread knife) to cut the bread out, leaving about a 1/2" / 1.5cm wall of bread and crust. (Note 2)
- Place the bacon, cream cheese, cheddar and mozzarella cheese, jalapeños, scallions/shallots and pepper in a bowl and mix until combined.
- Use a knife or piping bag to stuff the mixture inside the baguettes.
- Garlic Butter: melt butter with the garlic and salt in the microwave or on the stove.
- Brush the baguette with garlic butter (or you can do this after you slice it).
- Slice the baguette into 1 1/4cm / 1/2" slices.
- Keep the slices pressed up against each other, and transfer to a large piece of foil.
- Wrap the baguette, then bake for 15 to 20 minutes, or until the bread is crusty and the cheese inside is melted.
- For optimal experience, serve warm!

- Reserve the hollowed-out bread from the baguette to dry and use as homemade breadcrumbs.
- Assemble the baguette in advance and freeze wrapped in foil and plastic; defrost before baking.
- Do not bake from frozen to avoid burnt crust before cheese melts through.
