Cheesy Refried Bean Dip

This super quick and simple hot cheesy bean dip is the ultimate crowd pleaser!

Ingredients

  • 2 cans refried beans
  • 1/2 cup sour cream
  • 1 packet taco seasoning
  • 8 oz shredded sharp cheddar cheese divided in half

Garnish

  • green onion chopped

Instructions

  1. Preheat oven to 400˚F.
  2. In a large bowl, mix together the refried beans, sour cream, taco seasoning, and half of the cheddar cheese.
  3. Spread bean mixture in a pie plate or medium sized casserole dish. Cover with remaining cheese.
  4. Bake 20-30 minutes or until the cheese is melted and the dip is piping hot.
  5. Garnish with chopped green onions and serve warm.

  • How to Store: To save leftovers, separate into meal sized portions and then place in an airtight container and store:
  • How to Reheat: This can be reheated in the microwave in 30 second increments, or cover with tin foil and place into the oven to reheat.
  • How to Scale: You can easily half this recipe if you don't need to make as much.
  • Refried Beans – Any kind of refried beans will work – vegetarian, seasoned, regular. You can also make your own with this Mexican Style Crock Pot Refried Beans Recipe.
  • Sour Cream – Any kind of sour cream will work too. Full fat, low fat, etc.
  • Taco Seasoning – I always keep homemade taco seasoning on hand, but you can use a packet of pre-made seasoning for great results!
  • Sharp Cheddar – Sharp cheddar is a trick I use to get more cheddar flavor with less cheese. You can certainly use regular cheddar cheese or Mexican blend but you may need to add more cheese to get the same amount of flavor. It will honestly taste good with just about any cheese though!
