Chess Pie is a Southern classic dessert made with simple ingredients.

Ingredients
- 1 pie shell unbaked
- 1 ½ cups granulated sugar
- ½ cup unsalted butter melted
- 4 eggs beaten, room temperature
- ¼ cup half and half light cream, or milk
- 2 tablespoons cornmeal
- 1 tablespoon white vinegar
- 1 tablespoon all purpose flour
- 1 ½ teaspoons vanilla extract
- ½ teaspoon salt

Instructions
- Preheat the oven to 425°F.
- Line a 9-inch pie plate with pie shell and with a fork, poke the crust in a few places to allow steam to escape. Place a piece of parchment paper in the shell and fill it with pie weights or dry beans.
- Bake the crust for 5 minutes. Remove the weights and parchment and bake for an additional 3 minutes.
- Meanwhile, in a medium bowl, whisk sugar and melted butter. Add the eggs, cream, cornmeal, vinegar, flour, vanilla, and salt. Whisk until smooth. Pour the filling into the prepared crust.
- Place the pie in the oven and immediately reduce the oven temperature to 325°F. Bake for 70 to 75 minutes or until the pie is set.
- Cool completely on a baking rack before cutting, about 2 hours.
Notes
- Chess pie can be covered and stored in the fridge for up to 4 days.
- To freeze, wrap the whole pie or individual slices in plastic wrap and freeze for up to 3 months.
