  • 2 pounds boneless skinless chicken breasts, about 2 breasts
  • salt and pepper
  • 2 tablespoons olive oil
  • ¼ cup unsalted butter
  • 8 ounces sliced mushrooms
  • ½ cup chopped yellow onion, about ½ medium onion
  • 1 cup frozen peas
  • 3 cloves minced garlic, about 3 teaspoons
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup half and half
  • ¼ cup white wine vinegar
  • 1 (4-ounce) jar pimentos, drained
  • 1 teaspoon chicken bullion

Instructions

  1. Season 2 pounds boneless skinless chicken breasts, all over with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook the chicken for 3-4 minutes on each side.
  2. Remove the chicken from the skillet and dice once it’s cool enough to handle. The chicken will finish cooking later.
  3. Add the ¼ cup unsalted butter, 8 ounces sliced mushrooms, ½ cup chopped yellow onion, and 1 cup frozen peas to the skillet and cook the vegetables until they are tender, about 4-5 minutes.
  4. Add the 3 cloves minced garlic, and cook for just a minute. Whisk the ¼ cup all-purpose flour into the butter and vegetables to create a paste.
  5. Slowly whisk the 2 cups chicken broth and 1 cup half and half into the butter paste. Stir and cook until the sauce becomes creamy.
  6. Add in the chicken, ¼ cup white wine vinegar, 1 (4-ounce) jar pimentos, and 1 teaspoon chicken bullion. Reduce the heat to medium-low and cook until the chicken is cooked through, stirring occasionally.
  7. Remove the skillet from heat and serve with rice, noodles, or dumplings. Season with salt and pepper to taste!
